2 medium-sized beets, peeled and grated

Peel and grate two large carrots.

1/4 head of cabbage, cut up very small

1/2 cup of fresh lemon juice or apple cider vinegar

2 teaspoons of olive oil

Add salt and pepper to taste.

Cut up a handful of fresh parsley if you want to.

For extra sweetness, you can add a tablespoon of honey or maple syrup.

For crunch, you can add a handful of walnuts or sunflower seeds.

How to Do It:

Get the vegetables ready. Peel and grate the carrots and beets to start. You can use a box grater or a food processor with a grating blade to do this. To shred the cabbage, use a sharp knife to cut it into thin strips. To make this salad taste great, you need to make sure the vegetables are cooked just right.

Put the olive oil, lemon juice or apple cider vinegar, and honey or maple syrup (if you’re using it) in a small bowl. Whisk them together. The bright and sour taste of this dressing will balance out the earthy taste of the beets and the sweetness of the carrots in the salad.

Mix and season: Put the grated beetroot, carrot, and cabbage in a large bowl and mix them together. Spread the dressing on top of the vegetables and mix them around until everything is covered. Add as much salt and pepper as you like.

Add Extras: If you want to use parsley, sunflower seeds, or walnuts, add them to the salad and toss it again. The parsley will give it a fresh, herbaceous taste, and the nuts or seeds will give it a great crunch.

Set It Down: The salad should sit for at least 10 minutes before it is served. This time to rest lets the flavors blend, which makes the salad taste better all around.
