1 1/2 kg of purple cabbage

20 grams of rock salt, measured out in tablespoons

1 glass (200 ml) of apple cider vinegar

Two small lemons’ worth of juice

How to Do It:

Get the cabbage ready: First, wash the purple cabbage really well. Then, cut it into thin strips that look like ruffles. It will taste better if the slices are quite thin.

To salt the cabbage, put the slices in a large bowl and mix them together. Spread the rock salt out on top of the cabbage. After that, rub the salt into the cabbage with your hands. This method helps the cabbage get soft and lets its natural juices come out.

Add Lemon and Vinegar: Pour the apple cider vinegar over the salted cabbage. After that, squeeze the juice of two lemons into the mixture. Along with their bright, sour taste, the vinegar and lemon also help the cabbage get crisp by adding to the pickling process.

Stir and Marinate: Make sure all the ingredients are well mixed. Make sure that the vinegar and lemon juice mixture covers all of the cabbage strips well. Place the bowl somewhere cool and cover it with a lid or plastic wrap. Let the mixture sit for at least four hours, or better yet, overnight.
