One liter of milk from sheep

1 meter of cotton gauze that doesn’t stick to water (find this in pharmacies)
One jar and one mold
Getting ready:
Put the milk in a saucepan and heat it slowly over low heat for 15 minutes. Do not boil it.
Use a citrus squeezer or a fork to get the juice out of half a lemon while the milk is heating up.
After 15 minutes, take the milk off the heat and slowly add the plain yogurt and lemon juice. Mix for a short time.
For at least three hours, let the mix sit.
Fold the cotton gauze over a few times and put it in a pot or other container.
Put the mixture through the gauze and let the whey go into the saucepan. Keep the curdled part aside. Squeeze hard to get the whey apart.
Put the part of the cotton gauze that has curdled in a different container. Put a weight on top of it and put it in the fridge for at least 30 minutes.
When you open the cotton gauze, you can add salt to the cheese if you want to. Put it in any mold you like.
In its mold, put the cheese back in the fridge for another 8 hours.
